Preserving the Harvest: Lacto-Fermentation

Keep immune systems strong while preserving summer's bounty! In this workshop, participants will learn first-hand how to naturally ferment a variety of garden vegetables. Lacto-fermentation, an ancient pickling process that uses homemade salt brine to preserve freshly harvested vegetables, fosters the growth of friendly bacteria to preserve the vegetables. These same bacteria help to maintain the natural balance of bacteria in our intestines. Recipes from author and healer Sharon Kane will be provided. Pre-registration required.
$25 NOFA members/$30 Non-members.

About the instructor: Sharon Kane is an organic gardener, improvisational cook, musician, and energy healer. She has written a book on food preservation titled: Lacto-Fermentation Through The Seasons:?The Art of Old Fashioned ?Salt Brine Pickling.

In this eight part organic gardening series, gardener Charlotte Trim will walk participants through a full vegetable growing season. With information geared toward feeding a family of four, these two-hour workshops will cover planning, fencing, planting, weeding, mulching, 2nd crops, harvesting, and food preservation. Charlotte will use her own garden to provide hands-on demonstrations. The small seminar-style nature of the workshops will also allow ample time for questions and discussion.

Session 1: Planning, Saturday, April 2, 2011c9:30am-11:30am
Covers size and location of garden, soil preparation, time and work saving solutions, what vegetables to grow, bulk orders, local resources and fencing solutions.

Session 2: First Planting, Saturday, April 16, 2011 9:30am-11:30am
Planting begins-greens, onions, leeks, carrots, potatoes, peas, strawberries.

Session 3: Weeding, Mulching and More Saturday, 2011 May 14, 9:30am-11:30am
Keeping weeds at bay, mulching practices, transplanting and succession plantings.

Session 4: Mid-Summer Planting, Saturday, May 28, 2011 9:30am-11:30am
Time to transplant tomatoes, winter squash, asparagus, and corn.

Session 5: Warm Weather Seedlings, Saturday, June 11, 2011 9:30am-11:30am
Peppers, cucumbers, summer squash, melons and trellising

Session 6: Thinking Ahead, Saturday, July 9, 2011 9:30am-11:30am
Freezing vegetables, troubleshooting.

Session 7: Fall Planting and Cover Crops, Saturday, August 6, 9:30am-11:30am
Late planting of beets, kale, chard. Also, cover crops and dehydrating produce.

Session 8: Wrap Up, Saturday, September 24, 2011 9:30am-11:30am
Winter wrap-up, with a talk on root cellaring.

  • Cancellations will be honored and refunds issued (except $10 processing fee) with notice made within 10 or more days of the workshop. After that, you may designate someone else to attend in your stead, but refunds will not be available.
